Honey-Glazed Sweet Potatoes

Today's recipe was inspired by both this web recipe and by @CommealaMaison who could not withstand my HKD17 honey in a plastic bottle. She generously offered me a glass bottled honey Acacia honey (Miel d’acacia) from her online shop Comme a la Maison. Thanks @CommealaMasion! I could not control myself from trying it by the spoonful and yes, it was more smooth, less sweet and less thick than the usual honey which I like it. I don't think I can ever go back to using any plastic bottled honey or any HKD17 honey for that matter. The question now is how I am going to use up my old bottle as soon as possible, perhaps I can bring it back to work to share with colleagues for coffee or tea?



Recipe (serves 2 -3 as snacks)
  • 3 - 4 medium sized sweet potatoes (I used Japanese Sweet Potatoes)
  • 1/2 cup of butter (25g perhaps)
  • 1/3 cup of honey
  • 1 tea spoon for lemon juice
  • salt and pepper + parsley flakes


Step 1 - Wash and dry all sweet potatoes with paper towel. Cut into about 1-inch pieces. Set aside.



Step 2 - Mix butter, honey and lemon juice together in a heated pan.




Step 3 - Pour butter mixture over the sweet potatoes pieces. Toss to mix well if needed.




Step 4 - Place on tray and bake uncovered for about 40 mins or until "fork tender"



Step 5 - Sprinkle some parsley flakes, salt & pepper then plate.

Wash then dry sweet potatoes. Cut into 1-inch pieces, mix into melted mixture of 1/2 c butter, 1/3 c honey and 1 tsp lemon juice. Bake uncovered for about 40 mins or until "fork tender" then plate with parsley, salt & pepper. [characters: 225]
