Recipe (serves 1 - 2)
- 3/4 cup of Ricotta cheese
- 1/2 cup of milk
- 2 eggs separated
- 1/ 2 cup plain flour
- 1/2 tablespoon of baking soda
- salt
- 20g of butter
- honey
- kiwi or whatever fruits you like
Step 2 - whisk the egg white until some foam is formed. Set Aside.
Step 3 - Mix ricotta, milk and egg yolk together.
Step 4 - Add in the flour, baking power and some salt.
Step 5 - Add in the foamed egg white and mix well.
The mixture should tun thick and slightly gluey. Set aside and heat up the pan.
Step 6 - Grease the pan with some butter and slowly transfer sufficient amount of batter to pan for cooking. Ensure you add in the batter slow so to let it slowly expand on its side to form a circle. You can form a square if you like, does not really matter.
Flip when the undersides turns gold. (around 3 -4 mins perhaps, really depends) Try not to make it too thick other wise it would take a long while to cook. The first batch of the hot cakes might not be as thick or as fluffy as expected, so do try the first batch and adjust the cooking time receptively.
Step 7 - Serve and top with sugar icing and whatever fruits you want. Enjoy the DINNER! :)
