Oh yes, I am using the Moleskine Recipe Journal now! woohoo!
Recipe
- 4 large bananas (mashed)
- 1/2 cup of white sugar
- 2 eggs
- 1/2 cup of butter (about 115 g) - leave at room temp for a bit
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 3/4 cup of flour
- 1/4 teaspoon of salt
Step 1 - mix flour, salt, sugar, baking soda and baking powder together. Set aside.
Step 2 - mash the banana then mix the slightly beaten eggs
Should look something like this then add in the slightly beaten eggs and butter (that's one huge butter)
Step 3 - combine dry and wet mixture together
mix well but don't over mix otherwise will be very tough.
Step 4 - butter the tray / cup [preheat oven to 180C]
Step 5 - fill the tray but don't top it, just lightly level and let it settle down
Step 6 - put in oven for 25 mins at 180C.
If you are using a Convection Oven, with 5 mins left, turn the knob to top grilling only to brown the top.
I did the same with with the mini loaves as well. Enjoy!

try use the really day old ugly looking bananas to bake next time..easier to mash them and a good way to clear out the stock at home..i sometimes bake banana muffins too, and i like to sprinkle some brown sugar on top to give a crunchy mouthfeel..
looking forward for the easter long weekend now..u remind me that i haven't touch my oven in ages! =>

I usually don't keep banana at home so I had to go buy those relatively young bananas instead. Perhaps I should stock some at home just in case I feel like baking at 10:30pm at night again haha ..

I second Greentea00's suggestion - it's a fab way to use up very soft & brown-speckled bananas.
An even better time to have banana muffins is in the morning. The smell of baking filling the flat is so comforting and exciting. My cheat for muffins-for-breakfast-work days is to sprinkle some water onto them and then reheat them in the oven...the aroma soon fills the kitchen :)
@cheeky angel. I am actually thinking of getting up early to make them later, that would be a very good way to start the day! :)
I have been making muffins since....the age of 14. For me, the best way is to buy bananas and store them till they are really speckled and ripe, then freeze them. When you defrost it for your recipe (you can do this quickly in the microwave), it mashes effortlessly and is really sweet + rich in banana flavour.
@Anonymous, thanks for the tips! I rarely stock banana at home on a regular basis so your method would be perfect so I can basically store them for a long time and get them out whenever needed! And for the greater flavors too! thanks!!
